Redemption Brownies
I wanted super chewy, rich, fudgy brownies so I found the internet best recipe and made my own tiny tweaks to it. This came out perfect. Chocolatey, not too sweet, the perfect fudgy texture that got chewy as it cooled. Delicious with ice cold milk.
Ingredients
5 tablespoons unsalted butter
1/2 cup granulated sugar
3/4 cup brown sugar
1/3 cup vegetable oil
2 large eggs plus 1 egg yolk, cold and whisked
1 teaspoon vanilla extract
3/4 cup cocoa powder
1/2 cup all-purpose flour
1 tablespoon cornstarch
1/4 teaspoon salt
3/4 cup semisweet chocolate disks
Instructions
Preheat the oven to 325 F. Line an 8 x 8-inch metal pan with parchment paper. I just learned why metal vs. glass is better from brownies and purchased the pan recommended here: https://handletheheat.com/glass-vs-metal-pan/
In a microwave-safe bowl, add the 5 Tbsp butter, 1/2 cup granulated sugar, and 3/4 cup brown sugar. Microwave for about 1 minute, or until the butter is melted. This should be enough to make a paste with the sugar and butter.
Add the 1/3 cup oil first, then the 2 eggs, 1 egg yolk, and 1 tsp vanilla. Stir in the 3/4 cup cocoa powder, 1 Tbsp cornstarch, and 1/4 tsp salt until mostly smooth. I used a whisk to incorporate everything. No risk of overmixing until the flour is added.
With a rubber spatula, stir in the 1/2 cup flour until just combined. Stir in the 3/4 cup chocolate disks at the end.
Spread the brownie batter evenly into the prepared pan. It’s quite thick, with a consistency between cookie dough and cake batter. It didn’t automatically spread into the corners of the brownie tin until I spread it with the rubber spatula. Place in the oven and bake for 30-35 minutes, or until the brownies are set and a cake tester inserted into the center has moist crumbs attached. Do not overcook. Let cool completely to solidify before cutting and serving.
Brownies can be stored in an airtight container at room temperature for up to 3 days. Brownies will be gooey when served warm, chewy when served at room temperature, and fudgy when served chilled.
