Half Mochi Brownies
We were watching chocolate week on Great British Bake Off when my partner mentioned “you haven’t made us brownies!” and requested mochi brownies. I thought it’d be a fun idea to try half mochi half all-purpose flour brownies, just to see what the texture might be like. It was an experiment. Turned out much more mochi-like than fudgy/chewy brownie-like.
Ingredients
1/4 cup (4 tbsp) unsalted butter, melted
1 tbsp oil
1/2 cup granulated sugar
1/4 cup brown sugar (I’d suggest doubling to 1/2 cup)
1/2 cup Mochiko
2 tsp instant coffee powder
1/2 cup cocoa powder
1 tbsp cornstarch
1 and 1/2 tsp baking powder
1/2 tsp salt
1 and 1/2 cup whole milk (I’d suggest adjusting to 1/2 cup whole milk)
2 large eggs
1 tsp vanilla extract
1/2 cup all-purpose flour
1/2 cup semisweet chocolate disks
Flakey salt to top
Instructions
Preheat oven to 350 F
Melt the butter and sugar in the microwave for 30 seconds. This results in a chewier texture
Mix all ingredients except the all-purpose flour and chocolate disks for last. You don’t want to over-mix the flour
Once the batter is smooth, incorporate the flour and chocolate disks at the end and pour into an 8x8 pan lined with parchment paper
Bake at 350 F for 45 minutes, until a toothpick in the center comes out clean
Let cool before cutting
This came out less sweet and fudgy than I was hoping for. I think I’ll stick with flour brownies for now. The adjustments I suggested in the instructions might have saved this from being the odd “a bit stodgy” sponge it ended up as. Still tasty to snack on, but not as rich, sweet, or chocolatey as I expect from a brownie.
