Hot Pot at Home
Hot pot is such a nourishing comfort food. We eat it for Thanksgiving, Christmas, and many other holidays. I like making a single-serve version at home in my pressure cooker. It’s easy to meal prep, with packets of frozen vegetables, meats, and whatever other toppings you like. The broth is a mix of Little Sheep soup base and Golden curry cubes. My favorite items are enoki mushrooms, kabocha, tripe, fish balls with roe, and corn.
Ingredients
Fresh or frozen vegetables and meat
Water or broth
Hot pot soup base powder, curry cubes, any other seasonings
Instructions
Toss everything into the pressure cooker.
Fill with a few cups of water or broth of your choice. Season to your liking.
High pressure for 5 minutes.
Enjoy! With rice and noodles.
It’s barely a recipe. Something so customizable and easy to throw together. I like meal-prepping the individual packets, each with a slice of kabocha, some cubes of carrots, a few slices of tripe, a bundle of enokis, and one fish ball with roe. Instant hot pot at home.
